Ingredients

  • 1/2 cup whole wheat flour I used white whole wheat flour
  • 1/2 cup unbleached flour
  • 1/4 cup rolled oats
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup agave nectar
  • 1/2 cup canned pumpkin
  • 2/3 cup okara or 8 ounces firm tofu, blended in a food processor until smooth
  • 1 teaspoon vanilla extract
  • 1 tablespoon turbinado sugar — or icing
