- 1/2 cup whole wheat flour I used white whole wheat flour
- 1/2 cup unbleached flour
- 1/4 cup rolled oats
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup agave nectar
- 1/2 cup canned pumpkin
- 2/3 cup okara or 8 ounces firm tofu, blended in a food processor until smooth
- 1 teaspoon vanilla extract
- 1 tablespoon turbinado sugar — or icing
