For the Casserole:
- 1 large yellow onion, diced

- 3 garlic cloves, minced
- 1 tablespoon curry powder
- 1 teaspoon ground coriander
- 1/4 teaspoon black pepper
- 2 cups low-sodium vegetable broth
- 2 large sweet potatoes, peeled and diced
- 1 15-ounce can lite coconut milk
- 3 cups cooked brown basmati rice (recipe below)
1 cup golden raisins - 1 cup whole grain bread crumbs
- 1 teaspoon garlic powder
- 1/2 teaspoon ground fennel seed

- 2 cups brown basmati rice
- 4 cups water
