Power of Plants

Faced with extremely high cholesterol, I was shocked because I looked so fit yet it was clear something was going terribly wrong in my body. I was on a keto diet for years. It was what I believed at the time was the only way to maintain my weight. It was one of those trends my personal trainer at the gym advocated. Many health practitioners recommended as well. I studied medical journals convinced it was the way to eat.

Keto diet means in very simplistic terms; eating very low carbohydrates and very high fat so your body uses fat for energy as opposed to carbohydrates. I now have a newfound appreciation for life and a deep devotion for the healing friendship which graces my dinner plate.

The fear of heart disease and having to take a statin, motivated me to change my diet. I found a simple and powerful method of recovery: A Whole Food Plant-Based Diet with the absence of oil. I’m embarrassed to admit as a dietician, I believed eating keto was a healthy diet.

The link between diet and disease was impossible to ignore and my conclusion was to immediately embrace a Whole Food Plant-Based Diet. After a year, my cholesterol naturally dropped within a healthy range. My new lifestyle of eating has not only helped me recover from high cholesterol but has yielded me a multiple of positive physiological changes.

My blood pressure has dropped to even a better reading and my doctor raves about my cholesterol and blood work, which is the best he has seen. I also, have energy to burn. Sometimes when I encounter stairs, I just want to run up them. Why? Because I can! I feel lighter.
