Spiced Pumpkin Oat Muffins

Ingredients

  • 3 cups old fashioned oats
  • 1/2 cup oat bran or oat flour
  • 2 cups pumpkin puree
  • 1 cup unsweetened applesauce
  • 1/2 cup unsweetened plant milk
  • 1/2 cup walnuts (optional)
  • 1/2 cup golden raisins (optional)
  • 2 tablespoons maple syrup
  • 1 tablespoon flax meal or chia seed
  • 1 tablespoon cinnamon
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 400 degrees.
  • Mix dry ingredients together.
  • Add wet ingredients and mix well.
  • Spoon mixture into silicone muffin pan or parchment muffin liners in a muffin tin.
  • Bake for 45 minutes.
