Summer Time Fruit Salad

With a record early heatwave upon us, I thought it was a good time to round up a favorite no-cook recipe with so many delicious seasonal summer fruits!!

Ingredients (Makes 1 1/2 cups)

  • 14 oz package silken tofu
  • 2 teaspoons vanilla extract
  • 1-2 tablespoons of maple syrup or other preferred syrup or honey

Instructions

  • Blend in blender or whisk til smooth.
  • Cover and chill in refrigerator at least 2 hrs before serving.
  • Store in a glass jar with lid eat within 2 days.
