With a record early heatwave upon us, I thought it was a good time to round up a favorite no-cook recipe with so many delicious seasonal summer fruits!!
Ingredients (Makes 1 1/2 cups)
- 14 oz package silken tofu
- 2 teaspoons vanilla extract
- 1-2 tablespoons of maple syrup or other preferred syrup or honey
Instructions
- Blend in blender or whisk til smooth.
- Cover and chill in refrigerator at least 2 hrs before serving.
- Store in a glass jar with lid eat within 2 days.
