What I Eat on a Typical Day- Low Fat Plant Based Nutritionist

Many people are surprised at the amount of food that I eat per day. “But you are so Skinny!” I often hear. FYI I prefer the terms healthy, strong, and fit to the word skinny.

I eat a large volume of food every day and I love it. I always eat enough to feel satisfied and never let myself go hungry. I love not being afraid of gaining weight from eating too much and I know that putting healthy low-fat plant-based whole foods into my body will give me the nutrients and energy to feel great every day.

So what exactly do I eat on a typical day? Here is a look at what is on my plate:

Breakfast: I ALWAYS eat breakfast EVERY SINGLE MORNING! Usually after enjoying a large glass of water or tea. My breakfast includes a big bowl of oatmeal with blueberries and walnuts. Lately, I’ve been loving adding turmeric into my oatmeal for its cancer-fighting benefits. Plus I usually drink at least 16 ounces of green smoothies (I like to vary the fruits I add in my green smoothie but my favorites are banana, pineapple, apple, and mango and I always add at least two handfuls of fresh greens!)

Snack: (If hungry) carrots, celery, or cucumber with oil-free hummus or a cup of black beans with hummus

Lunch: Usually consists of leftovers from dinner sometimes wrapped in corn tortillas, or two slices of Ezekiel sprouted grain toast spread with 1/2 an avocado and more veggies with hummus or black beans with salsa and a piece of fruit.

Snack: If I know it is going to be more than 5 hours between lunch and dinner I will have a small snack either some fruit or a small handful of nuts.

Dinner: I always start dinner with a large garden salad with oil-free dressing. Followed by a baked potato with black beans and salsa, lentil soup with rice, tofu stir-fry, or a sweet potato with white beans, and steamed veggies.

Dessert: I do not eat at night unless I am truly hungry. Then I will usually grab some fruit to satisfy my hunger.

This is a typical day for me and I try to follow it most of the time. Although I do not consume oil or sugar at home, there are times when I am eating out that I do consume these things. I am however, 100% plant based and never consume any kind of animal products.
